Her staple one-pot dish, groundnut stew makes a great main course for serving your family and is perfect for the winter months. This recipe will give you a satisfying combination of sweet, spicy and savoury.
Groundnut Stew Ingredients:
- ½ cup Vegetable oil (or any oil of your choice)
- Any assorted meats (chicken, smoked turkey, oxtail, beef cubes,)
- 1 ½ tablespoon tomato paste
- 1 ½ large sweet onions sliced
- 1 large sweet onion chopped
- Chicken bouillon or Maggie cube (measure by taste a tsp at a time)
- 2 scotch bonnet or habanero pepper (optional: adjust for heat preference)
- 1 bell peppers chopped
- 1 Roma tomatoes chopped
- 2 cloves of garlic
- 1 ½ tablespoon thyme
- 1 ½ cup water or chicken broth (any broth can be used)
- 1 cup natural creamy peanut butter
- 2 cups thawed and drained chopped
- spinach (optional)
