This is a great meal hearty meal to make for yourself and your family as it makes 6 servings! It’s best served with white rice. This dish is a crowd-pleaser for sure!
Eric Fraudeau brings over 30 years in the food & hospitality industries in France, Mexico, Canada & the USA, including working in the kitchens of Alain Ducasse & Joel Robuchon. Yetunde Oshodi-Fraudeau started her first business in the hospitality industry at the age of 25 managing up to 17 vacation rental properties in Paris. Combining this French chef’s passion for French cuisine, and the entrepreneurial & marketing skills of his Nigerian-born American wife, Yetunde Oshodi-Fraudeau, this dynamic duo has been bringing eager food & wine lovers together for a culinary experience of a lifetime.
It started in 2007 when they opened @cooknwithclass.paris as a one chef operation, offering French cooking classes to visiting tourists, in English. Chef Eric was the first French chef to offer such classes full-time in Paris. The concept was simple: Class sizes were always kept small and included market visits as part of the learning experience; the cooking was hands-on; generosity was the motes Operandi; the objective was to share French culture through its food.
The Paris school has since grown and expanded from a one-room cooking school to a 2-floor, 3-studio, culinary atelier, including not only cooking classes but also French desserts, baguettes, croissant & cheese & wine classes & more.
In 2015 after moving to Southern France, they have offered cooking classes in @cooknwithclass.uzes focusing on Provençale and Mediterranean cuisine and introduced a week-long intensive French culinary vacation package to deepen the love of French food & wine always in a relaxed, convivial atmosphere.
Ingredients:
- 1.2kg (3 pounds) Monkfish Fillet
- 3 Garlic Cloves
- 1 Tbsp Olive Oil
- 1 Tbsp Butter
- Salt and Pepper
For the Fennel Cream sauce:
- 1 Bulb of Fennel
- 1 Onion
- 1 Tbsp Butter
- 200ml White Wine
- 150ml Whipping Cream (Heavy Cream)
- Salt and Pepper
