How To Make Low Carb Pepperoni Pizza

You would think after all the pizza and pasta I had in Italy I would be fed up of it all by now. But I came back home wanting some pizza, so I decided to make a healthy low carb pizza also known as a fathead pizza. This is also Keto friendly!

Yields 1| 8 slices | Prep time: 10 minutes | Cooking time: 25 minutes 

Ingredients:

 

For the pizza base:
  • 90g almond flour
  • 2 tbsp cream cheese (56g)
  • 170g mozzarella cheese
  • 1 tsp mixed dried herbs
  • 1 egg
  • salt and pepper, to taste
  • dried rosemary, garlic or other seasonings (optional)
  • virgin olive oil to grease your hands
For the toppings:
  • 150g mozzarella cheese
  • 85 pepperoni
  • 65g green chillies
  • 50g halloumi cheese (optional)
  • oregano, to garnish

For the tomato sauce:

  • 200g tinned chopped tomatoes
  • 1 garlic clove, peeled and finely sliced
  • 1 tsp dried oregano
  • salt and pepper, to taste
  • 1 tsp ground paprika
  • 1 tbsp coconut oil

Method:

  1. Pre heats the oven to 200ºc.
  2. To make the pizza base, place mozzarella cheese, cream cheese in a bowl and microwave for 1 minute. Stir, then microwave for another 30 seconds.
  3. Add eggs, salt, optional seasonings, almond flour and mix very well with a spatula/folk until well combined.
  4. Place dough in-between two sheets of parchment paper and roll dough out until thin and desired pizza shape.* Tip: To prevent the dough from sticking, grease your hands with olive oil.
  5. Remove the top parchment paper and make holes with folk all over the pizza base to ensure it cooks evenly.
  6. Move the pizza base with the bottom parchment paper and place on a baking tray.
  7. Bake in the oven for 10 – 15 minutes until golden brown with crispy edges.
  8. For the tomato sauce, add coconut oil or any oil of choice to a frying pan and add finely sliced garlic.
  9. Once the garlic begins to colour lightly, add tinned chopped tomatoes, followed by the rest of the seasoning and allow to simmer on medium heat for 5 -7 minutes.
  10. Allow the tomato sauce to cool down before placing on the pizza crust.
  11. Add the remaining grated Mozzarella and all toppings. Sprinkle oregano to finish.
  12. Return the pizza in the oven and bake until cheese is melted and preference of how well cooked you like your toppings.
